总督别墅Best Of Both Worlds

还没到槟城之前,就已看过Jacob的照片,它是Dining Room餐馆主厨黄嘉亮的爱犬,一头长得特别雪白漂亮的萨摩耶犬,在面簿朋友圈中爆红。Dining Room是麦卡里斯特楼(Macalister Mansion)的时尚法式餐馆,也是刚摘下米其林一星的新加坡餐馆Whitegrass的姐妹餐馆,到槟城去当然不能不去解馋,也顺道和Jacob见面。
黄嘉亮主厨的美食富有创意,大胆采用富有浓厚当地风味的食材,如槟城咖喱,将之融入法式料理当中,为当地饮食界创新河。我从没想过在以街头美食闻名的槟城能尝到那么精致的法式料理,难怪许多老饕把槟城形容为最佳高级餐饮目的地。
Dining Room位于麦卡里斯特楼地面层,这栋大楼已有100多年的历史,是当时英国总督诺曼麦卡里斯特上校的居所,外观充满英国传统气质。大楼说大不大,面积1700平方米,但建筑是典型的殖民地风格,很有气派,被新加坡的设计团队Ministry of Design改建成为一个结合当地历史与新世纪时尚的酒店。古迹与时尚的结合往往是铤而走险的事,但麦卡里斯特楼做得很好,因此成为Design Hotels成员酒店的一分子。在豪华保守的大背景下,这栋有着浓郁殖民主义风格的建筑,在设计总监佘崇霖的巧思下恰到好处植入了现代设计,在过去与未来间取得了漂亮平衡,八间豪华客房的格调简约,餐馆、书房、酒吧、大厅的设计也别具一格,整体建筑完全以欧洲豪宅的规格来规划,一走进酒店,像是从21世纪回到19世纪。
我入住的角头大房,得益于建筑原本的格局,里头没有什么柱子和墙壁,空间宽畅,享有L形窗户,打开窗就可看到泳池。在改建为酒店的过程中,除了结构被加强,原有建筑风格被强化,窗户也都换上了隔音性能良好的玻璃。浴室为长方形设计,就在大床后,厕所和洗澡间分别在左右两端,中间为浴缸,特别吸引目光的是墙壁的马赛克瓷砖,既新派也有槟城的娘惹风。
麦卡里斯特楼,距离许多出名的街头小吃和乔治市虽然不远,但还是得乘车,所幸在当地Grab车非常方便,特别推荐在乔治市附近的“吕家打石街牛肉粿条汤饭”和在同个咖啡店的松脆蚝煎,饱餐之后到乔治市逛逛,流了一身汗后回到舒适的酒店,觉得人生无限好。

Named in honour of Sir Norman Macalister, one of the first British governors of Penang, the Macalister Mansion is now a ultra-chic and hip boutique hotel in its capital city. 
The loving restoration of the 19th-century colonial building, helmed by Singapore architectural firm Ministry of Design, fused history with modernity and luxury. 
The stunning makeover has earned Macalister Mansion a spot in the Design Hotels network, which represents and markets a choice selection of independent hotels around the world. 
Each of the eight guest rooms, which range in size from 40 to 60 sq m, boasts a unique design and specially commissioned artworks. 
Facilities at the stately 1,700-sq-m hotel include a wine bar, a pool with an adjoining bar and a den which serves whisky and cigars. 
My spacious corner room takes up the upper right wing of the building, from which you can look down to the pool. Right behind the big bed is the bathroom, with a bathtub as the centrepiece. Particularly eye-catching are the mosaic tiles on the wall, which give the bathroom a distinct Peranakan feel.
The meticulous facelift has preserved the colonial charm of the building while adding modern touches such as soundproofed windows. 
The hotel is not far from some of George Town’s famous street food stalls. I highly recommend the beef noodle soup and fried oysters at ST Loo Beef Noodle Soup in Carnarvon Street.
But you do not have to leave Macalister Mansion for good food. Dining Room, its flagship restaurant helmed by chef Johnson Wong, serves innovative French cuisine and has been hailed as one of Penang’s top fine-dining establishments.
Chef Wong is charting new waters in the Penang dining scene, infusing local flavours like Penang curry into French cuisine.
The stylish set-up is the sister restaurant to Whitegrass in Singapore’s Chijmes which was recently awarded a Michelin star. 
I highly recommend a trip to Dining Room the next time you are in Penang. Delectable food aside, it also offers another highlight — Chef Wong’s pet dog, a white fluffy Samoyed named Jacob, which boasts a firm Facebook following of its own.
